TOMATO

When Ces asked if I would be interested to do the second “Iron Chef LaPiS Challenge”, I was honestly both excited and a wee bit, ahem, “apprehensive”.

Excited because this would probably be the closest I would get to rubbing (virtual) elbows with “foodie greats” and “iron chefs extra-ordinaire” in cyberspace and apprehensive because I was quite afraid that my entry wouldn’t quite measure up to LaPiS’s “discriminating” standards… hahaha! J

I know…‘nuff of my cheesy intro… ;) Obviously, I welcomed the “Tomato Challenge”!  So, here goes…

A widely cultivated South American plant (Lycopersicon esculentum) having edible, fleshy, usually red fruit.

According to Wikipedia, tomato consumption is believed to benefit the heart among other things and has been associated with decreased risk of breast cancer, head and neck cancers and might be strongly protective against neurodegenerative diseases.

And if this isn’t enough reason to munch away on this “veggie-fruit” or include this is our daily diet, tomatoes contain lycopene, one of the most powerful natural antioxidants.  Lycopene has also been shown to improve the skin’s ability to protect against harmful UV rays.

Tomatoes are also used extensively in Mediterranean cuisine, especially Italian and Middle Eastern cuisines. The tomato is acidic thus making it especially easy to preserve in home canning -  be it whole, in pieces, as tomato sauce, or tomato paste. Tomato juice is often canned and sold as a beverage while unripe green tomatoes can also be breaded and fried, used to make salsa, or pickled. The fruit is also preserved by drying, often by sun, and sold either in bags or in jars in oil.

As for me, since cooler days are upon most of us especially with the onset of winter, what better way to keep warm and toasty than with a steaming bowl of this…

Yes, a definite comfort food – both for the tummy and for the soul. Couple this with a grilled mozzarella sandwich and I’m in “foodie heaven”! (*sigh*)

the simple and lowly carbs filled POTATO…is this week’s theme. simple? i had a difficult time deciding on what to post here! geesh! seriously. but more importantly i was so swamped the whole weekend and with that…i offer my deepest apologies again this time for posting oh so late!

anyway…i was able to come up with anything Potato in a jiffy…what better way to eat them but having them baked! slathered with loads and loads of butter, a dollop of sour cream and a drizzling of chopped chives. deelicious!!! even my daughter loves it!

…to kick off our IRON CHEF inspired themes, this week is all about succulent and sweet strawberries! and all i can come up with is everyone’s favorite in the house…CREPES. this one is specifically for moi and my girl. we love crepes with strawberry filling, loads of whipped cream, slathered with a bit of cream cheese…more whipped cream on top and finally fresh cut berries to garnish. the downside of this? making the crepes in itself requires a whole lot of time and effort, but eating them…not even a minute!

kids and nutella…what can possibly go wrong, right? and if i may say so, even for big kids like me! i made these on one of those playdate days. tried to make the simple bread and nutella spread a bit more fancy by making them into cutesie nutella sushi! an easy-piecey, quick-in-a-jiff, eye-candy solution for KIDS and their friends!

…Saturday mornings, more often than not is our ‘you-me-while-the-kids-do-karate’ time as a couple or something like that.  our less than an hour gastronomic date. or shall i say, our ONLY date a week if we’re lucky enough. as simple as it is,  we definitely love it and always look forward to this ‘luxury’ that we are blessed with.

…my very first ever home-made Atchara [pickled papaya] as requested by the husband. his most favorite appetizer. yeah right. like he needs one, huh? okay…palate cleanser? allow me to say that it was really good!:) the big bowl didn’t even make it to at least 2 weeks of having it every single night? i only managed to bring a small bottle to my cousin in Connecticut. got some good raves as well from their end:)

Let me start with the warmest thank you to all of you who dropped by FISHBALLZinc’s FISHbook page :) hee! and for adding it on your fan pages!!! MWAH MWAH to y’all! M cannot extend his gratitude enough for your kindness.

this on the other hand is M’s very recent addition to the page…the Anatomy of Pinoy Street Food. As mentioned in our previous meme,  any suggestions and comments are most welcome.  Are we missing out on something? btw, thanks to Ms.K, Karen of Pots and Pans for correcting that ISAW part:) isaw is apparently the small intestines.  so what’s the large intestine called?  do we see it on the streets too?

Pinoy street food is one thing i truly miss especially here in Boston. way back in New York, you’ll bump into street food here and there. hotdogs, peanuts, tacos and burritos, Astoria’s famous Souvlaki, gyros…the works. i miss those too but not as much as i miss fishballs and squidballs dunked in sweet and spiCy dipping sauce! *drooling*! here!!!! and this is what this week is all about…STREET FOOD.

BEANS in my burrito. i like! [not too much though, haha!] i had to specifically give proper instructions to have them in a separate bowl since M doesn’t want his burrito with beans. they were from Chipotle, where i first learned to appreciate rice and tortilla eaten together! lol! we used to have them in New York, street food fashion. i wasn’t much of a fan although they were authentic [read: made by true blood Mexicans lol!] the ones from Chipotle were humongous, good for 2 and deliciously spiCy, the way i want it!:)
