M’s Chicken Curry

meaty.tasty.flavorful! but not so overwhelmingly spiCy, just the perfect heat and distinctive taste from the yellow curry:) i tell ya, M will be cooking more of this in the future…if only because I Say So! hee!

Litrato: EATS a date!

…i was half anticipating the possibility of going on a date for Vday because i knew all along that the kids are invited to a swimming party that day. that said, i also knew that the protective mom in me cannot just let them swim by themselves. so we stayed.
until it was time for them to play games in the gym and eat. that’s a good couple of hours more to ourselves.

…and we can’t help but order steaks! opkors:) at syempre pa, hindi matatapos ang tipanan na ito ng walang???…
DESSERT! matamis na dessert!
We still had less than half an hour until it’s time to pick up the kids, enough time to order a slice of Raspberry Cheesecake.
so there goes the slight chance that we got away even for a little while… a good couple of hours.

DATE or dating place as this week’s theme…for a while there i thought i won’t have an entry. you know very well that DATES when you have little kids here in the US and some, are very PRECIOUS! and rare! something to be thankful for! and another thing to be thankful for are facial kits for microdermabrasion, when you need instant rejuvination when going on a date such as this!:)…

Lasang Pinoy, Sundays: layer EAT up!

Tedious as it may seem, I almost always make it a point to make LASAGNA at least once a week or every two weeks. Not only because I personally like the dish, but more importantly because the kids love it! Proudly too, this has been my most successful attempt so far, structure-wise.In spite of getting the right flavor, the consistency of previous ones tend to be on the runny side most often than not, mainly because I put too much meat sauce and/or cream layers. This time though, I tried to follow a recipe I found online. Well, I incorporated one key ingredient, which is sweet Italian sausage. I rarely follow exact measurements except when I bake, so this is still ‘champective’ [as we call it in Architecture, coined for ‘chambang perspective’:] One thing to take note of is that I tweaked the layering method a bit, adding more pasta layer than what was called for, due to the smaller size of my baking pan and because the kids really liked it with more pasta than filling. Hence, it came out more manageable, both in serving and eating.
Anyway, Lasagna is the ultimate LAYERED food that I can think of and it’s something that I know I can possibly come up with anytime [and yes, even in the midst of all these boxes that has yet to be unpacked], be it the vegetarian version with eggplant or the carnivorous one such as this. The recipe is posted here, for those who might want to do the said recipe. It may seem long and difficult to follow, but it is in fact easy, a lot easier than expected. Credits to mylasagnarecipe.
FF: Bacon-wrapped Steak Medallion

…the last of the bunch. while the first batches that we had these Steak Medallions wrapped in bacon from Omaha Steaks were cooked almost well done giving it a dryer texture and taste, i made sure that this one has more moisture that gives out a subtle milkish taste to the meat. grilled just how i like my steak…medium rare…

…this is a classic holiday food, Meat Loaf from our Christmas Noche Buena. too bad i didn’t even get the chance to ask for my mom’s recipe. another comfort food with lots of childhood memories to be cherished forever…this on the other hand was a to-go cooked by one of my cousins from Connecticut. still delicious and up until this day, i still have a few slices left which i will eat for lunch in a few minutes!:]…
For LaPiS, it’s all about ‘pangat’ as we call it…a jargon of sorts for ‘pangatlo’, for the nth time, recycled…LEFT-OVER food! tends to be tastier eaten this way! though there is that guilt feeling and a desire for me to grab some acne treatment after eating all those oily stuff! lol!
