Lasang Pinoy, Sundays: Easter and Eggs
I have had a long weekend last week – well-deserved and much-needed 4 days off to celebrate Easter in this part of the world. So typical of pinoys, I was accustomed to the solemnity of Good Fridays and Black Saturdays, followed by joyous Easter Sundays. But down under, it’s all stripped down to Easter with happy thoughts multiplying like rabbits! The last office hour Maundy Thursday was spent with a few drinks, an invitation to a girly afternoon tea to celebrate Easter Friday, a family affair the whole Saturday, lunch and dinner with friends on Easter Sunday and another fabulous non-working Easter Monday! I so love NZ!Anyway, we had eggs and bunnies all around the office in all colors, flavors and sizes. Here’s what was left last Monday.
So I was just thinking… what can you do with real eggs?
Leche Flan is nothing without eggs…
Some muffins can’t do without eggs…
Or even red and salty.
So what have you cooked with eggs lately?

By the way, I usually make 2 types of leche flan. One should have caramel dark and bittersweet the way I like it!
